Omelet Confit of Tomatoes


Ingredients :
15 small tomatoes cherry cut half
2 tablespoon olive oil
Salt, pepper
2 garlic, smashed 
Thyme, Bay leaves 
6 beaten eggs
How to make : 
  • Put olive oil on top of  small tomatoes, add salt & pepper, thyme & bay leaves inside a oven tray
  • Bake for 30 minutes in 180°C oven
  • Stir fry tomatoes with garlic, add more olive oil if needed
  • Add beaten eggs & cook in small heat & covered pan for about 20 minutes
  • Serve as light maindish with green salad
