Macaroni Telur Dadar

50 gr macaroni
300 ml air
75 gr daging cincang
4 butir telur
1 sendok makan bawang bombay cincang
1 sendok teh oregano
1 sendok teh peterseli cincang
garam & merica bubuk
1 sendok makan mentega

Cara membuat :

  • Masak macaroni dalam 300 ml air hingga matang, sisihkan
  • Kocok telur, tambahkan garam & merica
  • Panaskan mentega & masak bersama daging & bumbu hingga setengah matang
  • Tambahkan macaroni, gulung, masak hingga matang

Pangsit Goreng Fried Wonton


250 gram Tepung Terigu
1 putih telur
50 gram margarin lelehkan
seledri cincang
2 sdm air
garam & merica secukupnya

Cara membuat :

  • Campur tepung, putih telur aduk rata tambahkan margarin leleh sedikit demi sedikit, lalu tambahkan aair sedikit demi sedikit sampai kalis & tidak lengket
  • Tambahkan seledri, garam merica
  • Ratakan hingga tipis, potong 10x10 cm

Chicken 'Peking Duck Style'


Ingredients :
1 Chicken of 1,2 kg
Star Anise powder
1 tablespoon cinammon
50 gram of chopped fresh ginger
1 Minced Onion

Topping :
3 tablespoon Honey
2 tablespoon Brown Sugar
3 tablespoon Soja sauce
1 teaspoon 5 spices
1 tablespoon White wine
1 tablespoon Ginger
2 tablespoon Chopped Garlic
3 tablespoon Sesame oil can be replaced by vegetable oil

How to make :
  • Pour boiling water to the surface of chicken to melt the fat
  • Cook the topping about 2 minutes
  • Put cinammon, star anise powder and chopped ginger on the surface
  • Brush with Topping
  • Cook in heated oven 220°C for about 1 hour.
  • Served with steamed rice
  • Can be served with Chinese Pancake

Chinese Pancake for Peking Duck


250 gram flour
150 ml boiling water
1 tablespoon cold water
Sesame or walnut oil


  • Put flour and add boiling water slowly, mix with wooden spoon
  • Add cold water
  • Knead 2 minutes, wait  at least 30 minutes
  • Cut dough into 4, take each piece of ball and roll it into ball
  • Cut ball into 4 again to make 16 balls, flatten the ball into 5 cm disc
  • Brush one disc with oil and stick 2 discs together, roll to become bigger disc of 15 cm
  • Cook in the pancake pan, separate each disc and steam them before serving

Cireng


Bahan :
Tajin :
140 ml air didihkan siram ke atas 40 gram sagu, aduk rata

Adonan :
100 gram sagu
Daun bawang cincang
1 siung Bawang Putih cincang
Garam & merica scukupnya

Cara membuat :
Campur tajin & adonan sampai kalis, rata & tidak lengket.
Goreng dalam minyak panas, sajikan denga sambal kacang atau sambal botol

  1. Lapisi atasnya roti tawar dengan mayonnaise buatan sendiri
  2. Tambahkan abon sapi pedas
  3. Siap dihidangkan sebagai cemilan di sore hari

Bolu Kukus

Bahan: 
250 gr gula pasir 
3 btr telur 
1/2 sdm TBM 

100 ml santan kental 
100 ml Sprite 

250 gr tepung terigu (protein rendah) 

Mocca pasta 
Pandan pasta 

Cara membuat: 

  • Panaskan kukusan. 
  • Kocok telur, gula pasir dan TBM hingga benar2 putih (kira2 10 mnt). Sementara itu campur santan dan sprite. 
  • Turunkan speed mixer. Secara bergantian, masukkan cairan dan tepung kedlm kocokan telur. 
  • Dgn speed tinggi, kocok kembali sebentar sampai semuanya tercampur rata.
  • Campur sedikit adconan dgn mocca dan pandan pasta.
  • Tuang adonan putih kedlm cetakan bolu kukus sampai hampir penuh (3/4 cetakan). Beri sedikit adonan mocca atau pandan pasta di atasnya. 
  • Masukkan ke dlm kukusan yg sudah benar2 beruap.

Nastar (Pineapple Tart)


Ingredients :
350 gram flour
4 tablespoon icing sugar
225 gram butter (room temperature)
1/4 teaspoon salt
3 egg yolks
2 tablespoon corn starch
1 egg yolk for basting

Filling :
2 can of pineapple, drain, squeeze to remove water, cook with 10 tablespoon of sugar, add more if you wish to have more sweet. Blend until mushy. At the end add corn starch. Keep cool in the fridge.

How to do :

  • Mix flour, corn starch, sugar & salt in a bowl. Add soft butter, add egg yolk and flour if needed. Make a dough
  • Divide dough into 24 small round. Use glass as mould. Flatten with your finger in the middle
  • Fill with pineapple jam
  • Make it round with your palm, baste with egg yolk
  • Cook for 25 minutes in 160°C oven

Crackling Pork Barbecue

500 gram pork belly
2 tablespoon five spices
1 teaspoon salt
1 teaspoon pepper
1 tablespoon soja sauce
a pinch of sugar
2 tablespoon rock salt

How to do :

  • Pour one kettle of boiling water on top of the pork belly
  • Marinate it  with the spices except rock salt
  • Score the skin 
  • Wait for one night
  • Next day, wipe dry the pork skin with kitchen towel
  • Preheat the oven to maximum temperature and put the pork inside
  • Cook until the skin is bubbling and popping up
  • Lower the heat to 160°C and cook for 1 and half hours and from time to time simmer with its juice

Serve with steamed rice & chilli sauce

Sate Padang a la Dian


PS. Resep ini hasil copas dari FB seorang teman Dian. Makasih banget, akan kucoba sepulang dari Indonesia nanti...

Bahan Rebusan Daging :
Air sekitar 3 liter ditambah garam secukupnya
750 gram daging sapi
1 lembar daun kunyit
5 lembar daun jeruk
seibu jari lengkuas
1 batang serai memarkan

Rebus semua sampai daging empuk, sisihkan daging potong dadu

Sambil menunggu daging empuk :
  • Goreng 110 gr kacang tanah tanpa kulit dgn sedikit minyat. Gerus sampai halus.
  • Siapkan bawang goreng.

Bumbu halus :
6 cabe merah
6 siung bawang merah besar
3 siung bawang putih besar
1 sdm ketumbar sangrai
1/2 sdm jintan sangrai
1 sdm kunyit bubuk
1 sdt garam
1/2 sdt gula pasir

Rendam setengah bagian bumbu halus semalaman dengan daging yang sudah empuk.

Olesi minyak & bakar.

Kuah :
  • Didihkan sisa bumbu halus dalam kaldu rebusan daging selama 30 menit
  • Tambahkan 100 gr tepung beras
  • Masukkan kacang goreng
  • Panaskan sekali lagi sampai saat dihidangkan
  • Saring atau blender lagi bumbu sampai halus sehingga hasilnya halus
Hidangkan dengan lontong & bawang goreng

How to make bean sprout (Toge)

In France we can get bean sprout but in big packaging. A waste cause we throw them away when it started to be yellowish.

So I tried to make them by myself with green beans or kacang hijau (in Indonesian)

Dip 100 gram green bean into water for one night

The next day, prepare a steamer pan, or whatever pan with hole under and
a recepient for the excess water, like below :

Put kitchen towel on top of the part with holes, spread the beans,
put another towel on top the beans



Water three times a day.

Within three days, you can harvest the sprout.

Nasi Tim Ayam

Minyak untuk menumis
Ayam cincang
Jamur kancing
2 siung bawang putih
2 siung kecil bawang merah
seruas jahe
Merica putih bubuk
Gula
4 sdm Kecap asin
2 sdm Kecap manis
Beras

  • Untuk bahan nasi : tumis bawang putih dan jahe sampai harum, tambahkan 2 gelas beras dan 3 sdm kecap asin, sedikit garam serta merica, tambahkan 3 gelas air jika mungkin pakai kaldu ayam, masak hingga beras agak lembut, tambahkan air jika diperlukan. Sisihkan.
  • Untuk bahan daging : tumis bawang putih dan bawang merah sampai harum, tambahkan ayam cincang, 2 sdm kecap manis dan 1 sdm kecap asin, merica. Masak hingga setengah matang.
  • Campurkan beberapa sendok bahan daging bersama beras yang sudah direbus, lalu tim hingga matang, taburkan sisa bahan daging keatas nasi yg sudah matang.

Biji salak


2 buah ubi jalar, swet potatoes
200 gr palm sugar
400 ml water
1 pce pandan leaf
200 ml coconut milk
2 tsp salt
200 gr tapioca flour

how to make :
steam sweet potatoes until soft, mix with a pinch of salt and smashed
when the mashed potatoes is cool, mx with tapioca flour
roll over the mixture, and cut diagonal to make a diamond shape
boil palm sugar & water, boil the diamons shape biji salak for 10 minutes
put aside and add coconut milk

Salmon provençale with Indonesian rice roll


This one is my creation too, it contains lots of HISTAMINE, but I took my medicine before taken this, for 2 persons
Ingredients :
2 pieces of salmon
1 zuchinni, peel cut into small bites
2 tomatoes, peel cut into small pieces
half of red pepper, peel, cut into small pieces
salt & pepper
5 tablespoon white wine
olive oil

Indonesian rice roll :
Cooked rice
1 glass of coconut milk
1 bay leaf
1 cm f galangal
salt
1 big shalot
1 garlic
1 carrot cut into small piece
1 potato cut into small pieces
a bit of cooked green beans

How to make Indonesian rice rolls :
  • Cook again rice with warm coconut milk, water, bay leaf & galangal until the liquid absorbed
  • stir fry carrot, potato with shalot & garlic, add a bit of water & cook until soft, then add the cooked green beans
  • add salt & pepper
  • Lay a plastic cling wrap about 30 x 30 cm then spread the rice on top
  • add the stir fry vegetables on one side & roll the rice, tide very hard both side, cook again in steamer for 15 minutes
How to make salmon provençale :
  • stir red pepper, zhucinni & tomatoes in olive oil, add salt & pepper, add of a bit of white wine & half glass of water, cook through
  • then cook the salmon in another pan with a bit of olive oil 3 minutes each side, add salt & pepper
  • at the end, top the salmon with vegetables and serve with Indonesian rice roll that cut into sushi shape roll

Pindang Iga



Bahan :
750 gram iga sapi, potong kecil2
2 sdt garam
2 batang serai, ambil putihnya memarkan
2 lembar daun salam
5 butir bawang merah, bakar
2 cm jahe, bakar
2 cm kunyit, bakar
2 siung bawang putih, bakar
50 cc asam jawa, ambil air
2 buah tomat, potong empat
4 cabe merah, bakar
2 cabe hijau, bakar
4 sdm kecap manis

Cara membuat :
  • rebus iga, daun salam & garam selama 1 jam
  • haluskan bawang merah, putih & kunyit, tumis bersama jahe bakar hingga harum
  • terakhir tambahkan air asam, tomat, kecap manis serta cabe merah & hijaunya
  • masak lagi sampai mendidih sampai dagingnya lembut

Vla

500 ml susu segar
150 gr gula pasir
2 sdt tepung maizena
1 sdt ekstrak vanili
2 kuning telur
Cara membuat :
cairkan tepung maizena dgn sedikit susu, campur kuning telur kocok, aduk sisihkan
Masak susu & gula hingga mendidih. Tuang sedikit adonan susu kedalam adonan telur, aduk rata.
Masukan & campur dalam sisa adonan susu, ratakan didihkan sekali lagi.



Bakso babi goreng

1 lembar juhi (cumi kering) gunting kecil2 rendam air sampai lembek
100 gram daging babi cincang boleh ganti dengan ayam
2 sdm tepung sagu
garam merica
1 bawang putih

Cara membuat :
tumbuk bawang putih dengan juhi, campurkan dengan daging, sagu, garam & merica, buat bulat2 lalu setelah dibedaki sagu dikit, goreng dalam 2 sdm minyak panas.

makan dengan selada yang banyak, untuk diet

Resep Kulit Pangsit



Bahan
150 gram tepung terigu
25 gram tepung kanji
35 ml air
garam
1 sdt minyak
1 telur ayam

  • kocok telur ayam & garam hingga rata, tambahkan minyak, kocok lagi hingga rata
  • Campur tepung terigu & tepung kanji, ayak, campur dalam kocokan telur, uleni hingga kalis
  • bagi adonan mjd tiga, taburi tepung kanji, diamkan 30 menit
  • giling adonan, siap pakai

Martabak manis pakai Teflon

250 gr tepung terigu
1 sdt ragi
150 gr gula pasir
375 cc santan hangat
2 butir telur
1/2 sdt baking soda

Bahan isi :
Kacang tanah sangrai
Susu kental manis
Keju parut

Cara membuat :
  • Masukkan ragi dalam santan hangat, aduk sampai berbuih, sisihkan
  • Campur tepung & gula, buat lubang ditengah, masukan telur, tuangkan santan sedikit demi sedikit, uleni sampai gula larut, tambah baking soda, diamkan 20 menit di tempat hangat
  • Panaskan wajan teflon (sampai keluar asap), tuangkan mentega, kecilkan api sedang, kecilkan api lagi jika terlalu panas
  • Tuang adonan, dan masak sampai permukaannya kering tapi kulitnya tidak hangus
  • Angkat taruh di talenan, tambahkan gula pasir, susu kental manis & kacang
  • Lipat dua; potong sesuai selera
