INDONESIAN FISH CURRY




Ingredient :


1 teaspoon of tamarind paste, mix with 2 tablespoon of water

500 g of red snapper cleaned & marinate with 2 tablespoon of lime juice

3 garlic

1 onion

1/2 teaspoon coriander seed

1 teaspoon ginger

1 teaspoon turmeric

pinch of sugar

2 chillies deseeded

1 cm of galangal root

3 candle nut (can be replaced by macadamia nut)

1 bay leaf

2 bird chillies

2 kaffir lime leaves

250 ml coconut milk



How to make :


  1. Pound the garlic, onion, candle nut, salt, chillies and coriander seeds

  2. Stir fry with bay & lime leaves, galangal until change color

  3. Put the fish and bird chillies

  4. Pour 1/2 cup of water & half of coconut milk

  5. Cook for 30 minutes

  6. At last add the rest of coconut milk

Serve with steamed rice
