
Bahan :
1.5 kg buntut sapi, buang minyaknya
2 buah wortel, iris 3 cm
3 buah kentang, iris seukuran wortel
boleh tambahkan kol, kalau suka
1 buah daun bawang, iris halus
1 buah (bukan siung ya...) bawang putih dengan kulitnya, cuci bersih
garam & merica secukupnya
1.5 l air
Bumbu :
2 buah cengkeh
sedikit biji pala & kayu manis
2 buah bawang merah, haluskan
1 ruas kecil jahe, haluskan
Sambal hijau :
Haluskan cabe hijau rebus bersama garam
Cara membuat :
- Rebus buntut selama 2 jam dengan api kecil
- Buang lapisan lemak yang terbentuk pada saat merebus
- Tumis bumbu halus hingga harum, tambahkan dalam rebusan buntut
- Tambahkan kentang, wortel, kol (jika ada) dan bawang putih
- Tambahkan garam dan merica bubuk, rebus 1 jam lagi
- Siap disajikan bersama nasi hangat dan sambal hijau dan jangan lupa ditaburin bawang merah goreng
ENGLISH VERSION
Ingredients :
1.5 kg oxtail, clean the fat
2 carrot cut into 3 cm
3 potatoes diced as big as the carrot
a bit of cabbage if desired
1 leek, cut into small pieces
1 whole garlic with skin, wash well
salt & pepper
1.5 l water
Spices :
2 cloves
a bit of nutmeg & cinnamon
2 pieces of shalots, pound
1 cm of ginger, pound
2 tablepoon oil
Green chilli paste :
Pound the boiled green chillies with salt, take out the seeds if you don't like too spicy
Cara membuat :
- Boil the oxtail for about 2 hours on low heat
- Time to time, take out the fat excess from the boiling pan
- Stir fry the pounded spice until smell good, add into the soup
- Put in the carrots, potatoes, cabbage and garlic
- Put in salt & pepper, simmer for another 1 hour
- Served hot with steamed rice and green chilli paste and fried shalot
