Ingredients :
6 tomatoes, put 3 minutes inside the boiled water
3 eggs, mix well
1 onion, cut into small dice
1 bell pepper, cut into small dice
1 teaspoon of salt
1 teaspoon of pepper
2 tablespoon of tomato ketchup
a pinch herbs de provence made of thyme & bay leaf
How to make :
- Peel off the tomatoes & mince them
- Heat 2 tablespoon of olive oil, put the onion & pepper until smell nice
- Add the tomatoes, put salt pepper, tomato ketchup & herbes de provence
- Simmer for 20 minutes on low heat
- Add slowly the battered eggs until they cover all the tomatoes, do not mix, until the color changed, stir & set aside
- In another hot pan, cook bacon for 1 minute each side, serve with the tomato egg mixture
