PIPERADE (Southern French Omelette)

Ingredients :

6 tomatoes, put 3 minutes inside the boiled water

3 eggs, mix well

1 onion, cut into small dice

1 bell pepper, cut into small dice

1 teaspoon of salt

1 teaspoon of pepper

2 tablespoon of tomato ketchup

a pinch herbs de provence made of thyme & bay leaf

How to make :

  1. Peel off the tomatoes & mince them
  2. Heat 2 tablespoon of olive oil, put the onion & pepper until smell nice
  3. Add the tomatoes, put salt pepper, tomato ketchup & herbes de provence
  4. Simmer for 20 minutes on low heat
  5. Add slowly the battered eggs until they cover all the tomatoes, do not mix, until the color changed, stir & set aside
  6. In another hot pan, cook bacon for 1 minute each side, serve with the tomato egg mixture
