INDONESIAN COCONUT MILK RICE (NASI UDUK)




500 gr rice
600 cc coconut milk
1/2 teaspoon salt
2 bay leaves
2 pandanus leaves
1 teaspoon coriander seeds smashed

Chilli Paste :
100 gr cooked peanuts
1 red chilli
7 bird's eye chillies
1 teaspoon of salt
1 teaspoon of sugar
1 tablespoon of lime juice
100 cc water

Garnish :

Omelette of 2 eggs
Fried/Grilled peanuts
Deep Fried shallot
Deep fried anchovies (can ommit)
Sliced cucumber

How to make :


  1. Steam the rice for 25 minutes (dry)

  2. Boil with coco milk, salt and other ingredient, cook until milk absorbed

  3. Steam again until rice cooked.

  4. Serve
