AREM-AREM (Indonesian Rice Roll with chicken)

Ingredients :
500 gr rice
1 pandanus leaf
500 ml coconut milk
1 teaspoon salt
3 bay leaves

Filling :
300 gr chicken minced
3 chicken liver minced
1 tablespoon of soy sauce
pepper
2 tablespoon of cooking oil

Pound spice:
2 garlic
1 shallot
2 chillies
a pinch salt
a bit of ginger powder

Wrap :
Banana leaves, cut rectangular 20 x 15 cm, heat a bit on top of boiled rice to soften the leaves, NOT TOO LONG !

How to make :
  • Boil all the ingredients til milk is absorbed completely
  • Stir fry the filling with spices until cook through
  • Prepare the banana leaf, spread about 3 tablespoon of boiled rice, pour the fillings.
  • Roll the wrap with the rice. Stich side of leaves with toothpick.
  • Steam for 35 minutes.

This kind of food can be apetiser as well as main course. Served with bird's chilli or chilli sauce.
