SOTO BABAT Indonesian Beef Tripe Soup



Sounds scarry but this is really a delicacy. The day I made it, I run out of the raw ingredients, I used the canned ones, but the result is not bad at all.

The recipe below is using the raw ingredients, if you are using the canned one, skip the stomach preparation and if you are in Indonesia, can buy the BABAT already prepared & cleaned just need to cook for 2 hours until tender.

Stomach Preparation :

Cleaned 500 gram of beef stomach with 1 bowl of water mixed with 5 tablespoon of white vinegar

Cut them into 2 cm cubes and put inside cold water, boil for 10 minutes, drain & clean up th stomach

Ingredients :

500 gram cleaned beef stomach or beef tripe

1 litre of water

1 glass of coconut milk

a pinch of cumin

1 lemon grass

1 cm galangal

2 bay leaves

2 teaspoon of turmeric powder

3 tablespoon of lemon juice

salt & pepper

a bit of sugar

Pounded spices :

5 shalots

2 garlics

1 cm of ginger

How to make :

  1. Cook the beef tripe for 2 hours
  2. Mix together the pounded spices and other spices, and salt, pepper & sugar
  3. At the end pour in coconut milk, mix well and add up lemon juice
  4. Serve with steamed rice and green chilli paste
